From the growing internationalization of the economy has intensified the need for reorganizing productive factors and ways of business management. To ensure the survival and competitiveness primarily of small businesses is necessary for organizations to adopt new ways of working in production, innovating to meet the demand and the requirement of consumers. The implementation of Lean Manufacturing can be an alternative to eliminate waste and streamline processes, as well as the use of information systems as assist in planning, project management and decision- making. Pondering such information, applied a case study in a pizzeria located in the city of Guaratinguetá order to analyze the production process of pepperoni pizza, identify its bottlenecks, propose improvements and finally determine action plans through quality tools. In view of the findings observed, production management is critical to the success of a company.
